A few subscribers have asked about freezing tart shells. It’s always a good idea if entertaining large numbers to try and prepare as much in advance as possible so you too can also enjoy the festivities. Small tarts are great finger food for large gatherings and can be easily prepared in advance. The easiest option is to prepare, bake and freeze. Store carefully in an airtight container, remove from freezer up to 1 hour before serving, sit at room temperature then fill and serve. A good tip is to bake and store in little foil cups, they make for easy storage and protect from possible damage. Baked tart shells can be stored for up to 3 months in the freezer.
