Peeling:
- With a sharp knife, make a small cross at the bottom of the tomato.
- Pour boiling water over the tomato and leave for a few moments.
- Remove tomato and the skin should be lifting off at the cut section. Simply peel away the skin.
- If it doesn’t come away easily you need to soak a little longer. I find that ripe tomatoes peel very easily, less ripe need a longer soak. Avoid soaking the tomato for long periods as this tends to cook the tomato, which is not desirable.
Seeding:
- Place tomato in a sieve, over a bowl.
- Using fingertips, dislodge seeds (and thick membrane) from rest of tomato and discard.
- Save the juice for use in sauces etc.
