Go to any CWA cook book in Australia and there you’ll find a good reliable ANZAC biscuit recipe. If you don’t happen to have one at hand I’ve copied mine for you that I’ve been using for a long time. It comes from The CWA Cookery Book and Household Hints published by the Country Women’s Association (CWA) of Western Australia.
What more can you say other than that these biscuits are a favourite with almost every Australian you ask, often associated with childhood memories. Even I enjoy munching them though I’m not a keen biscuit eater. I’m sure it’s the oats and coconut that do it for me, as they do in my favourite fruit crumbles.
Read what the original ANZAC biscuits were like - they even had the alternative name of ‘ANZAC tiles’ - and you’ll probably thank the heavens that someone took the initiative, appropriated the name and combined it with a biscuit recipe more likely to have universal appeal. Most of us would regard them as iconically Australian as Vegemite. They can be baked all year round.
