Icing Sugar

Icing sugar comes as pure icing sugar and as icing sugar mixture, which has cornflour added. What we call pure icing sugar in Australia can be referred to as confectioner’s sugar in American and European recipes.

Honey

Honey is the most amazing natural product, produced by female worker bees visiting various flower blossoms that in turn flavour the honey. Look for leatherwood, gum and acacia honey in Australia by sourcing it from small producers where-ever you can. Avoid blended and heat-treated honey.

Horseradish

Fresh horseradish is available in winter. It looks like a short hairy carrot and is a creamy colour. After cleaning it is grated finely and often added to cream and vinegar to make a wonderful sauce to accompany roast beef.

Dried Herbs

Dried herbs are often used in savoury cooking. Herbs such as sage, oregano, rosemary and mint are popular. Blends such as Bouquet Garni and Italian are frequently used in specific recipes.

Golden and Red Shallots

Golden and red shallots are dry bulbs shaped like large garlic cloves. They are milder than an onion and are used in many recipes for that reason. Golden shallots are also referred to as eschallots and the red ones as Asian shallots.

Ghee

Ghee is another name for clarified butter. It has a higher burning point than butter. Often used in Asian and Indian cooking.

Gelato

Gelato is Italian ice-cream, made from an egg custard and flavoured with lemon, cinnamon, ginger, pistachio or whatever flavour you like.
